This is the ability to highlight keywords, delimiters (like quotes or parenthesis), and syntax for a given programming language or text format.

This makes editing programs much much easier. In particular, it makes finding syntax errors much easier because you have more information at your disposal: text AND color to help you find syntax errors and such.
